Flaxseed Muffins

The experts in Prevention's test kitchen created this recipe to delive 25 g of flaxseed per muffin, the amount currently tested against breast cancer.

3 c ground flaxseed
1 1/4 c flour
1 Tbsp baking powder
3/4 c skim milk
1/2 c egg or egg substitute
1/3-1/2 light molasses
2 Tbsp canola oil

1. Preheat oven to 350
2. In large bowl, mix flaxseed, flour and baking powder. In separate bowl, stir together milk, egg, molasses and oil. Stir wet mixture into dry one until just moistened. Pour batter into a muffin pan coated with nonstick spray. Bake for about 18 minutes until tops are lightly brown.

Makes a dozen. (To make muffins moist, add 1/2 c of apple sauce to the wet mixture in step 2. Flaxseeds are high in fiber and the plant version of Omega-3 oil)
