Rhonda and I are planning to host a series of “conscious cooking” classes using mostly local and seasonal produce. We want to get some feedback. I have been a foodie all my life and my love of food made me become overweight as a kid. In fourth grade, I had to wear adults pants cut down to fit me even though I was active and swam almost every day. My mom stopped buying me ice cream or other treats. Then, I started helping my mom in the kitchen as she cooked healthy dishes. I realized that food can taste good and be good for me. I still craved ice cream and treats, but I ate more healthily. I believe that we can all benefit from learning how to cook and eat consciously. If you have a healthy recipe, please post it in the comments. We plan to publish and sell an e-cookbook if there is enough interest.

Red Lentil Soup by Jeanne Kuntz, Wellness Coach
2 Tbsp olive oi
1 large onion, thinly sliced
7 c vegetatble broth
2 large carrots, cut into 1/4 inch
1 cup corn kernels,from fresh corn
1 cup peas
2 cups dried lentils
1 tbsp suger
2 tsp salt
1 tsp onion powder
1/2 tsp garlic salt
1/2 tsp pepper
1/4 tsp tumeric
1/4 tsp cumin
1/4 c chopped fresh parsley
