Upcoming Projects

Green Health Live TV is an interactive T.V. show with the latest information on medicine, lifestyle and diet choices that can help improve your health and the health of the planet.
I will be doing a Healthy Cooking Show with Rhonda Weidelman, MA, RD on Green Health Live TV. We are seeking Corporate Sponsors for our healthy cooking demo at different events like the 8/16 Holistic Health Retreat and 9/20-21 Yoga Health Fest. Cooking Demo - Chinese Chicken Salad


2 Persian cucumbers, thinly sliced
1 chicken thigh, boiled and shredded
1 bunch green onions, chop fine
1 tsp. flax and sesame seeds
1 tbsp. White vinegar
2 tsp. Soy sauce
2 tsp. Teriyaki Sauce
1 tbsp. Sesame oil
2 tsp. fresh Chinese parsley (optional)
Sprinkle of sugar, garlic salt, ground black pepper

1. In one dish, flavor thinly sliced cucumbers with a sprinkle of sugar, garlic salt, ground black pepper. Add 2 tbsp. white vinegar and 1 tbsp. sesame oil and mix.

2. In separate bowl, flavor boiled and shredded chicken thigh with 2 tsp. soy sauce, 2 tsp. Teriyaki Sauce, 1 tsp. sesame oil and a sprinkle of ground black pepper. Mix well.

3. Add 2 to 1. Garnish with flax and sesame seeds, finely chopped green onions and Chinese parsley (optional). For a spicy kick, add a dash of Chili Pepper.
Vegetarian option: substitute teriyaki baked tofu and agar for chicken.
Handful of agar, chopped evenly (about 1.5 inches)
1. Boil water, put chopped agar in hot water and quickly pour out into colander
2. Pat agar with paper towel to dry further
3. In one bowl, flavor thinly sliced cucumbers with a sprinkle of sugar, garlic salt, ground black pepper. Add 2 tbsp. white vinegar and 1 tbsp. sesame oil and mix
4. In separate bowl, flavor agar with a sprinkle of garlic salt, ground black pepper and sesame oil. Mix well.
5. Cut teriyaki baked tofu into slices. Add sliced tofu and agar to 3.
6. Garnish with flax and sesame seeds, finely chopped green onions and Chinese parsley.

Cucumbers contain Vitamin C and caffeic acid which help sooth skin irritations. Cucumbers' skin is rich in fiber and beneficial minerals.
Chicken is an excellent source of protein. 4 oz of chicken contains about 30 g of lean protein (over half of our daily need of protein). Even the dark meat has little fat and calories if the skin is taken off and chicken is boiled or grilled, not fried.
Onions add abundant flavor, are high in Vitamin C and a good source of fiber.
Flaxseeds contain a high amount of Omega-3 fatty acids which is proven to help reduce inflammation (such as arthritis), protect against heart disease, cancer and diabetes. They are also a good source of fiber.
Sesame seeds are a good source of calcium, magnesium, iron, manganese and copper. They may also help lower cholesterol.
Garlic is the most powerful anti-cancer foods according to the National Cancer Institute. It can also help lower cholesterol, high blood pressuer and boost immune system as well as our mood.
Tofu is a protein and nutrient rich vegetable source. It may also help lower cholesterol and improve symptoms of menopause.

Showing Up


I have said "yes" and shown up to many good events, some great ones and a few so-so ones. The 2 events that really inspired me were the Step Up Wellness Panel on 7/29 and the PACE's "Celebrating Women in Business" event last night. 150+ people attended each of these events.
